Outdoor events are preparing to kick off now that warmer weather approaches, and food trucks and trailers are ready to fill the streets again with various cuisines at local markets, outdoor activities, and around the Capitol. This comes as part of an occasional series on area food trucks and trailers and their operators. This week, we talked with Jim Salisbury, the owner of the Livin’ the Dream food trailer and cart.
It was my wife, Kathy, my brother-in-law, my sister-in-law, and I. We were at Easter dinner and we got to talking about what a food cart could do, and even talked about having one on a boat. Then I said, ‘You know what, that’s a great idea. I’ll try it!’ We didn’t end up doing one on a boat, of course, but my wife and I started with a hot dog cart in 2015.

How would you describe Livin’ the Dream’s culture?
We highlight party food that pairs great with beers. We do sausage and peppers, beef steaks, pulled pork, spicy mac & cheese with bacon, kielbasa and sauerkraut. Great food to have at a private party, festivals and car shows. We even do weddings, as well.
What are the crowd favorites on your menu?
It really depends on the crowd to be honest. What sells well at one event might not sell well at another, but I would definitely say the most popular is our sausage with fresh-cut peppers and onions. The spicy mac & cheese with bacon is also a real crowd pleaser. We did a brew festival and people were coming up to us after buying the mac & cheese with jalapeños and bacon saying that it was the best thing they ever tasted, so that was pretty amazing to hear.
